Healthy Chicken Quesadilla Recipe

Today I thought to eat something different and not very common in Indians, I tried to make chicken quesadilla at home so here is the outcome. Do you love snacks? What a silly, if you love snacks and would like to try something different then go and grab your apron because I am going to teach you how to cook Quesadillas at your home.

Quesadillas are very famous in America and it usually serve in Mexican restaurants. When I heard the name Quesadillas for the first-time it really sounded interesting to me then I researched for the recipe, hence I added little variation to try my own way. Here is my version of chicken mushroom Quesadillas for you. If you are vegetarian then you can substitute the chicken to mushroom or any vegetable you wish and no need to make it only with chicken. You can also make it with shrimp, beef, pork anything that you like. The recipe I have given here is for two people.

Ingredients for Quesadillas:

  • Chicken breast(1/2lb)
  • Salt and taco seasoning(a Pinch, taco seasoning is optional)
  • Sliced fresh green onion(1 tablespoon finely chopped)
  • Fresh chopped cilantro(1 tablespoon finely chopped)
  • Whipped cream cheese(1/2 cup)
  • Flour tortilla(1 big)
  • Grated cheese(1 cup)
  • Green chili(2-3 finely chopped)
  • Onion(1 small slice)
  • Capsicum(1/2 sliced any color)
  • Mushroom(1cup sliced)
  • Black beans(1 cup)
  • Sweet corn(1/2 cup)
  • Cumin powder(1/2tbsp)
  • Red chili powder(1tbsp you can adjust according to your taste)
  • Tortilla(2 large)

Recipe for Chicken Quesadilla:

  • Stab the chicken with a fork, add salt and taco seasoning to it. Keep it aside for ten minutes.
  • Grill the chicken and shred it.
  • Add green onion and cilantro to the Whipped cream. Mix it well and make a fine paste with it.
  • In the meantime fry those slice capsicum, onion and mushroom with cumin, red chili powder and salt. Fry it till 80% cooked.
  • Now spread this cream cheese over the tortilla with chicken pieces, capsicum, onion, mushroom fry and cheese.
  • Now heat the frying pan with little oil/cooking spray. Fold the tortilla and cook it in a high flame till both side turn slightly brown.
  • Now add black beans, corn, chopped green chili, salt and lemon juice in a mixing bowl. Mix it well.

Now your chicken quesadilla is ready to serve. Serve it hot to find the best taste of it. I hope you like it.
